When it comes to comfort food, few dishes can rival the depth of flavor you get from slow-cooked pork ribs. Add kimchi into the mix, and you’ve got something truly special. This Kimchi Pork Ribs recipe is one of our favorites for when we want a warming, hearty dish that’s both spicy and deeply satisfying.
What makes this version even closer to our hearts is that it’s made with our own homemade kimchi. The slow simmer brings out all the fermented, spicy, and tangy flavors of the kimchi, which melt perfectly into the sauce and coat the ribs beautifully. Over two hours, the pork becomes tender and juicy while the broth thickens into a bold, comforting stew.
It’s the kind of dish that fills the kitchen with incredible aromas and makes everyone impatient to sit down and eat.
Ingredients
1 kg pork ribs
250 g homemade kimchi (or store bought)
2 tbsp vegetable oil
1 tbsp sugar (plus extra to taste)
4 cloves garlic, chopped
2 spring onions, chopped
2 tbsp Chinese rice cooking wine
2 tbsp gochujang (Korean chili paste)
2 tbsp soy sauce
1 tsp sesame oil
5–6 cups cold water
Method
1. Bring a pot of cold water to a boil. Add the pork ribs and parboil for 10 minutes to remove impurities.
2. Drain and rinse under cold water. Wipe the pot clean, then heat vegetable oil over medium-high heat. Add the homemade kimchi and sugar, stir-frying until the liquid evaporates and the kimchi begins to caramelize.
3. Return the ribs to the pot and cover with 5–6 cups of cold water.
4. Stir in garlic, spring onions, rice wine, gochujang, soy sauce, and a little extra sugar.
5. Bring to a boil, then reduce to low and simmer for about 2 hours, until the ribs are tender and the broth is rich.
6. Finish with sesame oil and adjust seasoning with soy sauce or sugar to taste.
